Recipe for Mini Cherry Pies
We made these mini cherry pies during the COVID-21 quarantine, but they’re great any time! They are delicious, adorable, and bite sized(ish)! I added little hearts made from the pie dough on top of my pies, but you can do whatever shape you want. Leaves, a peace sign, a flower, you get it! Also, feel free to use a different fruit…you’re not limited to cherries! Enjoy these sweet treats :)
Mini Cherry Pies
Prep - 5 hours
Cook - 1 hour
Serves - 16
Pie Crust Ingredients
1 ¼ cups all-purpose flour
½ teaspoon salt
1 tablespoon sugar + more for topping (optional)
½ cup butter, chilled and cut into ½ inch pieces
¼ cup ice water
Pie Filling Ingredients
4 cups frozen cherries
¼ cup sugar
1 ½ tablespoons lemon juice
3 tablespoons cornstarch
Pie Topping Ingredients
2 tablespoons melted butter
Granulated sugar (to taste)
Tips!
Make sure both water and butter are chilled when making the dough.
Flip and rotate the dough when rolling it out to make sure it’s evenly flattened.
Optional: You can use leftover dough to create shapes or patterns on the pies.
